Gluten-Free Pumpkin Muffin Recipe

Ingredients

  • 1 ½  cups almond flour
  • ½ cup Shaklee pumpkin spice protein powder or your favorite protein powder
  • 1 tsp baking soda
  • 1 tsp coarsely ground sea salt
  • 3 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 3 eggs
  • ¼ cup avocado or walnut oil
  • ½ cup honey
  • ½ cup dark chocolate chips
  • Optional toppings: pumpkin seeds, nuts, chia seeds, shredded coconut

Method

Prep Time: 10 minutes Cook Time: 22 minutes Makes: 12 standard muffins

  • Preheat oven to 350F.
  • Mix all the dry ingredients in a large bowl.
  • In a small bowl beat eggs with a fork. Stir in oil, honey and pumpkin then pour into the flour mixture. Mix lightly with a large spoon.
  • Pour the batter into greased or lined muffin tins and add toppings.
  • Bake for 23 minutes or until a toothpick comes out clean.
