Gluten-Free Pumpkin Muffin Recipe
Ingredients
- 1 ½ cups almond flour
- ½ cup Shaklee pumpkin spice protein powder or your favorite protein powder
- 1 tsp baking soda
- 1 tsp coarsely ground sea salt
- 3 tsp pumpkin pie spice
- 1 cup pumpkin puree
- 3 eggs
- ¼ cup avocado or walnut oil
- ½ cup honey
- ½ cup dark chocolate chips
- Optional toppings: pumpkin seeds, nuts, chia seeds, shredded coconut
Method
Prep Time: 10 minutes Cook Time: 22 minutes Makes: 12 standard muffins
- Preheat oven to 350F.
- Mix all the dry ingredients in a large bowl.
- In a small bowl beat eggs with a fork. Stir in oil, honey and pumpkin then pour into the flour mixture. Mix lightly with a large spoon.
- Pour the batter into greased or lined muffin tins and add toppings.
- Bake for 23 minutes or until a toothpick comes out clean.
